Maryland Department of Agriculture to Host Acidified Foods Workshop

Small food processors will learn basics of food safety requirements and regulations  

Hagerstown, Md. (October 17, 2013) – The Washington County Department of Business Development Office of Agricultural Business Development is pleased to invite food handlers to attend a November 22, 2013, workshop on “Understanding Acidified Foods, A Training Program for Small Food Processors” at the Maryland Department of Agriculture in Annapolis, Md. 

Canning salsa, pickles and other acidified foods for sale requires special training. By attending this workshop, class registrants will learn the basics of food safety requirements and regulation in the manufacture of acidified in foods in Maryland. The class will cover topics including:

  • Microbiology of Thermally Processed Foods
  • Prerequisites for Food Processing
  • Principles of Acidified Foods
  • Measurement and control of pH
  • FDA Registration and Filing
  • Principles of Thermal Processing
  • Food Container Handling

A fee of $200 per person and advanced registration is required to attend the workshop. Registration closes Nov. 12, 2013. Fee includes materials, refreshments and lunch. Checks should be made payable to NFSC, University of Maryland- Acidified Foods Workshop.
